Karen's Slow Cooker Mongolian Beef

Who doesn't love a slow cooker meal?

This week we are treated to a fantastic recipe from one of ambassadors, who has kindly shared her Mongolian beef dish. Slow cookers are just perfect for this time of year when the days are getting longer and you can spend more time outside. Popping something into these handy kitchen implements means that a delicious meal and fantastic aromas greet you on your return leaving the rest of the day free.

Ingredients

For Mongolian Beef

  • 1 1/2lbs diced beef
  • 1/4 cup cornflour
  • 1 tbsp veg oil
  • 3-4 cloves garlic
  • 2 tsp fresh ginger minced
  • 3/4 cup water
  • 3/4 cup reduced sodium soy sauce
  • 3/4 cup light brown sugar
  • 1-2 tsp sriracha sauce
  • 1 cup shredded carrots

To garnish

  • 4-6 green onions
  • Sesame seeds

Instructions

Step 1:

Add steak and cornstarch to a resealable plastic bag, close and shake to coat well. This can also be done in a large bowl.

Step 2:

To the bottom of your slow cooker add vegetable oil, garlic, ginger, water, soy sauce, brown sugar and sriracha sauce. Stir to combine. Add in coated steak and carrots, stir again until everything is covered in the sauce.

Step 3:

Cover and cook on high for 2-3 hours or low for 4 hours until steak is cooked and tender.

Step 4:

Serve over white rice and garnish with green onions and sesame seeds if desired.
