Mini Gingerbread Houses

The perfect mini edible decorations sure to be a winner at any festive get together or adorning a cosy hot chocolate for one.

Gingerbread houses may look challenging but once you have the knack the sky’s the limit and there are some fantastic creations out there to draw your inspiration from. These miniature versions could be perfect at a wintery get together as drink toppers or table decorations.

If gingerbread is not your cup of tea then why not try your favourite choc-chip shortbread recipe or any other cookie creation that gives a nice solid biscuit to hold its shape.

  • Your favourite gingerbread or cookie recipe
  • pipe-able icing
  • miniature gingerbread house cookie cutters
  • extra sweets and sprinkles for decorations

Instructions

Step 1:

Make up your favourite low cal gingerbread or cookie recipe and leave to chill for a few hours in the fridge.

Step 2:

Roll out to around 6mm thickness on a well-floured surface, then use miniature gingerbread house cutters to cut all the required pieces.

Step 3:

Bake in a pre-heated oven according to the recipe then allow to cool on a wire wrack.

Step 4:

Make up a thick icing recipe and fill a piping bag. This will be used to join the pieces together as well as decorate so it needs to be fairly thick to set properly and hold pieces in place.

Pipe between joins of pieces and once set use the icing to decorate houses.

Step 5:

As an extra special hack did you know you can use crushed hard candies to fill in windows before baking. they will melt into place to give little stained-glass window effects.
