2 Ingredient Pancakes

Can’t wait for Shrove’s Tuesday? Nor can we! Try this speedy light & lovely 2-ingredient pancake recipe – ready in a matter of minutes.

FOR THE PANCAKES – Serves 2 (138 calories | 5g fat (2g sat fat)| 9g sugar per serving)

You will need:

  • 1 large banana
  • 2 large eggs

STEP 1: Blend your ingredients with a stick blender, I use Braun.

STEP 2: Spray a frying pan with Fry-Light and dollop your mix in the pan. Fry until golden (about 1 minute each side).

P.S. Top tip: Stack your pancakes with layers of fat free greek yoghurt and slices of fruit in between and drizzle with light syrup.
